Post Crispy Fried - What Happened Afterwards ...

We had dinner, nice. We ate the crispy fried chicken (drumsticks), And we decided to skip eating crispy fried anything  for a month or as long as we can. Period.

Fried maybe good, every once in a while. yes. But, not every day. I'm no health expert, but I can sure feel those grease creep inside. I drank soda right after dinner that evening. Of course, over accumulated number of times, those grease will pile, which will eventually lead to health issues..

I was thinking of other options, and I remembered I bought some Mackerel in the fish market a couple of days back. Now there's a healthy answer!

Great, so we have a wholesome option and budget friendly solution: Mackerel. No, we're not frying the Mackerel, we're cooking it with style. 

We call this dish in Tagalog "Pasksiw"  and in visayan dialect "Inun-unan" - basically adding tamarind base or vinegar, into your lovely mackerel, and cooking it, with the right amount of water.

Cooking Mackerel in Tamarind or Vinegar soup is easy, and the choice of fish is good, since mackerels don't have a lot of sharp bones that can be distracting while eating. They have clean flesh (depends on how big you bought them), and should be cooked around . -  minutes tops. And, if you're having a hard  time looking for any Mackerels, any fish will do. Tuna, Blue Marlin, and others you can easily grab from a local fish market

Here's how to cook Inun-Unan

  • Lay fish in a pan, decide how many to serve
  • Massage each fish with a little amount of salt (just enough to add taste)
  • Add 5 tablespoons of Vinegar (or tamarind, whichever is available)
  • Add 1/4 cup water
  • Slice 5 cloves of garlic (any way you like, diced, minced, no harm done) 
  • Add green chili (long ones), black peppers to taste
  • Cook for about 10 - 15 minutes
  • While it simmers, add 2 teaspoons of olive oil
  • Let it simmer for another 5 minutes
  • Enjoy & have a sumptuous dinner!
